The first thing that is different about New Mexico Chile is that it is spelled Chile, not chili!  As a transplant from Minnesota I also found it hard to believe, but in New Mexico chile is a vegetable, NOT a condiment.

Chile has a long history in New Mexico where it has been an important crop for hundreds of years.   It is still important and ex-pats will go to amazing lengths to get a chile fix.  Every year there are newpaper stores of people who have bags of chile shipped on dry ice, fly into town to buy some, etc. Are you a passionate hot chili lover ?
